Stopped by for lunch again. Love their full ribs and the brisket had a great bark today. Much props to the carver who gave me the burnt end section.

I love the fact they use a simple pepper rub on there meats. However when you do this I think you need a little more smoke than they had. I had the brisket and pork ribs. I was happy that they serve a full pork rib instead of the St Louis style rib. I feel like I am getting more meat for my money this way. Ribs came off the bone good but I thought they could be a tad more tender. The brisket was a little dry, this could be due to it being on the counter for a while but it had a good flavorful bark. Not bad for San Marcos.

Never fails, consistently awesome brisket and moist, juicy turkey thAt lets you really taste the bird with just a hint of smoke and the salt/pepper rub. Really appreciated the pit tour!!

Very good fatty brisket: 4.5/5.0 - good smoke ring, very moist and good flavor. Turkey: 4.0/5.0. Pork ribs: 3.75/5.0. Jalapeno cheddar sausage: 3.5/5.0. Very good service.

Quite good bbq. Good crust on brisket and beef rib. Brisket -got some burnt ends which were delishous. Crunchy bark, 1/8" smoke ring. Some pepper flakes. Could not decide between two sauces. Both were good. Only thing that would have been good is if fat rendered a little more to give more flavor without tasting fatty. A solid 3.75 out of 5

Longtime San Marcosans may recall this place as the former home of Woody’s, a barbecue joint that opened in 1984. It was taken over in 2007 by the Hernandez family, and in 2011 they changed the name to Hays Co. Bar-B-Que and Catering. You won’t find it if you’re not looking for it. Hidden at a blind curve a good ways outside of town, and definitely not in view of the Interstate, Hays Co. Bar-B-Que has been flying under the radar. It didn’t help that they’ve already changed names since opening after receiving the dreaded cease and desist for their previous moniker. After lingering here for a bit, it reminded me of Milt’s Pit BBQ just twenty minutes…
