A nondescript metal door on the side of the building is the entrance into the pit of this joint with more than one hundred years of history. Prause was a meat market in the late 1800’s and has been a barbecue joint nearly all of its life, according to one of the family owners, Mark Prause. He seemed to know all the locals that passed through the aforementioned back door as we stood and chatted….

A pork roll sounds like a school cafeteria main course that’s been chopped, pressed, and processed. It’s much better than that when executed by the pitmaster at Prause Meat Market. A whole pork shoulder is deboned then wrapped and tied in a roll before smoking. On this visit I tried the pork roll alongside an end cut from the pork chop. The only brisket available was yesterday’s, and the lady taking our order was quick to tell me not to bother. We were happy to just add a few links of their excellent homemade sausage, which is mostly beef with a bit of pork and is eternally moist. That end cut from the pork chop was heavenly: bits of crispy fat mixed with a seasoned crusty exterior and nicely moist meat. We were getting full on this road trip, but that pork chop bone was picked clean. The pork roll, although boneless with less fat, was similar to the pork chop. Well-seasoned meat that was nicely tender rounded out the meal, but this cut was a bit drier than the pork chop and it would be tough to order it again if the chop is available. I’m now glad that I have a good excuse to go back so I can try that brisket again, and another pork chop just might sneak into my order.

    I grew up here and I have eaten in many, many BBQ joints, but I will drive one hour to get to LG and eat lunch at Prause’s with Mark and Kathy any day!

    I spent every summer of my youth on a farm outside LaGrange, Texas and on Saturday, we would ride into town to get necessities – hardware store, feed store, groceries, tractor dealer, etc. No Saturday was complete without a BBQ lunch at Prause’s. My mouth waters just thinking about it. You didn’t mention their homemade sausage. It is as good as it comes and now you can buy it precooked by Prause’s with almost no fat. Keeps forever also. Try it next time.

    I live in Arkansas now and am strongly considering the 15 hour drive to this place. My grandmother bought meat from here all her life until the she physically could not any more, and then she would send family members three hours just to pick up her order. I grew up eating there food, and anyone would be truely missing out if they did not try it.

    Hell, I wouldn’t stop while driving BY this place for BBQ. I gave this place two tries on trips from Austin to Brnham and both times were horrible. Brisket tasted like it had sat around for hours and sausages were tough and really greasy at the same time. On top of that the old woman that was there could not have cared less that we were even there. Reminds of the bad attirudes of the old bags at Kreuz Market. Go to Lockhart or Luling instead of wasting your time and money here. They dont act like they want your business anyway.

    I journeyed to Prause meat market today and it was well worth the trip! I had brisket and sausage, and both were delightful. The sausage was top notch, snapped so loud when I bit into it that you will need hearing protection when you eat it! The Brisket was tender and juicy, and melts in your mouth.I got to stop in the back and chat with the pitmaster to thank him for some great food. Stop in and eat there when you are in the area. I drove 200 miles to eat there today, and it was well worth it. I will be back!!!
